Easy Vegetable Lasagna

Looking for a vegetable side or main dish? We just made vegetable lasagna.  The vegetables are getting more vibrant and tasty as we enter the nicer weather! 

Shopping list:
1 yellow squash
1 green zucchini
4+ tomatoes
1 spaghetti squash
about 2+ cups of mozzarella
fresh basil

Make the spaghetti squash first. Directions say to place whole squash in microwave for 1 minute, cut in half length wise and place on microwave safe dish and microwave for about 11 minutes.  Repeat with other half.  Scoop out seeds with spoon, and scrape out "spaghetti" with fork.  Stir fry the yellow squash and zucchini with olive oil and garlic.

Spray the bottom of a 9x13 pan and cover with about 1 cup spaghetti squash.  Layer sliced tomatoes and a layer of cheese.  Then layer the sliced yellow squash and zucchini followed by another layer of cheese and repeat until you're out of ingredients!

Bake on 350 for at least 30 minutes.  Enjoy!
