Toddler Meals: Veggie Cakes

Getting veggies in a toddler is not always the easiest thing.  Luke is a great eater and will always try the veggies, but will sometimes hold out for the mac & cheese!  He did like the veggie cakes that I recently made with inspiration from this recipe on Taste.com.  Refer to that one for more exact measurements.  

Shopping list:

Spinach
1 can of corn
1 can of peas
1 yellow squash
1 green zucchini
1 red pepper
1 onion
1 tomato
1 carrot
eggs
flour
optional salt, pepper, butter, and ketchup

Method:
1.  Use a grater and grate each vegetable.  Be careful of your fingers! 



2.  Mix in peas and corn.


3.  Add about 3 eggs so that the mix becomes a liquid.

4.  Add flour until the mix has more of a pancake batter consistency.

5.  Add salt/pepper to taste (ours were somewhat bland without it).

6.  Fry them up!  I used coconut oil but next time I'll use butter for taste.



7.  I saved some of the veggie mix, added a few more eggs, cooked ground turkey, and threw it in the oven to make a quiche for another dinner option!
