Paleo Spaghetti Squash Carbonara

I modified this recipe from Popular Paleo that I found on Pinterest.  Check out the original recipe if you prefer following exact measurements, or see mine below if you're more of a guesstimator like me... (Disclosure: I'm not actually doing the Paleo diet, so I'm sure if this is 100% Paleo!)

Shopping list:

Spicy Italian Turkey Sausage
Turkey Bacon
2 Tomatoes
1 Spaghetti Squash
White wine vinegar
Olive Oil (or I used Coconut oil)

1.  Start by cutting the squash in half lengthwise, put in microwave safe dish and cover with Saran Wrap.  I put it in for 15 minutes, I've done anywhere between 11-15 minutes depending on the size of the squash.

2.  While that's cooking, fry up the turkey bacon (I did 5 pieces).  Crumble it once crispy.

3.  Fry up the bacon crumbs, garlic, parsley, and cubed tomatoes in a separate pan.

4.  Fry up the sausage (would be good on the grill too!)

5.  When the squash is done, remove the seeds and use a fork to make the "spaghetti."

6.  Slice up the sausage and mix it with all other ingredients and a splash of the wine vinegar.

7.  Top with a poached egg, this totally makes the dish!

8.  I served ours with spinach, it was a hit!
