Crockpot Chicken Soup

Our little family of three was feeling under the weather.  All three of us had colds of various degrees.  What to do?  Well, Luke had to start Amoxicillin.  What to do next? Chicken soup, of course!

I used:
4 boneless/skinless chicken breasts 
4-5 large carrots, chopped
1 large onion, chopped
A package of celery, chopped
Low fat/ low sodium chicken broth
Fresh parsley, to taste
Salt/pepper optional

Add it all into your Crockpot with the chicken on the bottom.  

Cook on high for 7 hours.

When I was growing up, we always added "star pasta" (Pastina) to soup when we were sick.  This takes six minutes to boil up and adds a little something special to the soup.  

I cut up the chicken but you could leave it whole.  For tastier but less healthy soup, use a fattier cut of meat, a splash of white wine, and a tablespoon of sugar.  Purée the soup for baby food (if you skipped the wine)...and get well soon!
